Garbocz joined the Polish ice hockey club GKS Tychy in 1981, beginning a long tenure with the team. He played for GKS Tychy until 1993. For the 1993-1994 season, he ventured abroad to play for VIK Västerås HK in the Elitserien, which was the top-tier professional ice hockey league in Sweden at the time. Aside from this single season in Sweden, Garbocz spent his entire playing career in his home country of Poland, also playing for KKH Katowice. He ultimately retired from playing in 2001, concluding his career back with GKS Tychy.

Dariusz Garbocz had an extensive international career, representing Poland at both youth and senior levels in numerous significant tournaments.
2.2.1. Youth National Team
In 1989, Garbocz was selected to be a member of the Polish U-20 national team. In December of that year, he participated in the 1990 World Junior Ice Hockey Championships held in Finland. He played in all 6 of Poland's games at the championship, including the final classification game against France to determine the lowest rank, but did not record any points. Poland finished last in the tournament and was relegated.
The following year, in February 1993, Garbocz participated as part of the Polish team in the 1993 Winter Universiade held in Zakopane, Poland. In this competition, the Polish team finished 5th out of the 6 participating nations. After this, Garbocz did not feature for the national team for several years. He made a return to international play in 1997, when he was once again selected for the Polish squad competing in the 1997 Ice Hockey World Championships Pool B, which was hosted in Poland. He played in all 7 games during this tournament but did not register any points.
