Davis has made numerous appearances in various television series. His notable television credits include roles in dramas such as Without a Trace, Criminal Minds, and Six Feet Under, as well as appearances in comedies like Gilmore Girls, Windfall, and MADtv. Beyond television, Davis also maintains a presence in theatre, performing on stage in various productions.

Davis has significantly contributed to the video game industry through his voice acting and motion capture performances, particularly for Rockstar Games. His most acclaimed role is that of Dutch van der Linde, the charismatic and philosophical leader of the Van der Linde gang, in the highly successful video games Red Dead Redemption (2010) and its prequel Red Dead Redemption 2 (2018).
